Veggie Bake

This dish is so easy and tasty! I make a variation of this for just about every dinner and it never gets old. Plus its full of so many nutrients for your body! Ideally, the serving of veggies on your dinner plate should be the largest, then your protein (chicken, fish, or other lean meats), and then whatever else you are serving with the meal. If you are having carbs (pasta or bread), try to keep it at a minimum, whole grain, or even gluten-free.

Veggie Bake

Ok so here is the “recipe” (although I would hardly consider this as a actual recipe).

Choose at least 3 of these to combine (I’ve never had a bad combination so go crazy!)

1-2 zucchini sliced

green beans – around 2 cups ( or however much you want)

1 head of broccoli

1 head of cauliflower

2-3 tomatos diced

1 eggplant diced

1 ( or half) butternut squash

drizzle a 9×13 baking sheet with olive oil. Place veggies in pan.

Drizzle with more olive oil. That’s it!

Now bake at 350 for 20-30 min (until veggies are soft and a bit crispy on the edges). Make sure to stir the veggies several times throughout the baking to ensure being evenly baked.

Now Enjoy your plate full of tasty and addicting (at least for me they are) baked veggies!!
